Abstract:Stock flower (Matthiola incana) is an herbaceous plant belonging to the genus Matthiola of the family Brassicaceae. Stock flower (Matthiola incana) is a popular cut flower plant with red, light yellow or purple flowers. It is mainly used for decorative purposes in gardens. However, its flowers can be consumed as a vegetable or garnish, as well as its use as a tea and medicinal herbal. The aims of the present study were i) determination of physicochemical properties (as total dry matter, ash, protein, fat, reducing sugar, colour and titratable acidity values, mineral substances and fatty acid profile) of the flowers of “Canetto White” and “Noble White” varieties of Matthiola incana species; and ii) evaluation of total phenolic compounds and total antioxidant capacity via ethanol:water extractions of 3:7, 5:5 and 7:3, v/v, which were chosen according to the preliminary studies. Antioxidant capacity was determined by DPPH (2,2-diphenyl-1-picrilhydrazyl) and CUPRAC methods, while the total phenolic compounds were detected by Folin-Ciocalteu assay. While "Canetto" variety yielded higher values in terms of total dry matter, ash, protein and titratable acidity in flower petals, the "Noble" variety displayed high values for the amounts of reducing sugar and oil content. P, N and K were the most abundant mineral substances. It has been determined that C18:3 (gamma), C18:1, C16:0 fatty acids were the most abundant fatty acids. The "Noble" variety showed the highest antioxidant capacity for both DPPH and CUPRAC methods (as 1,7407±0,0093 mg TE g-1 dry matter and 3,9459±0,11194 mmol GAE g-1 dry matter). 5:5 and 7:3 EtOH:water extracts gave high antioxidant capacity values for both varieties and evaluation methods. With the Folin-Ciocalteu method, the highest amount of phenolic compounds in “Noble” was 17,57618 mg GAE g-1. In case of EtOH:water extracts, 5:5, v/v, extraction gave the highest amount of phenolic compounds for both varieties. According to these results, it could be concluded that the extracts of the stock flower petals have a high phenolic content and a significant potential for antioxidant activity.
