Özet:Bee pollen is a rich and natural food with high nutritional and medicinal content. It can be very quickly digested by the body, bloodstream and can be consumed by humans. Bee pollen contains amino acids, proteins, hormones, enzymes, carbohydrates, minerals, fats, vitamins, phenolic compounds, phytochemicals and anti-oxidative agents. Chemical composition of bee pollen can be varied according to geographical and botanical features. In this study, phenolic compounds and carotenoids in chestnut bee pollen samples collected from the Marmara and Black Sea regions were determined by HPLC-DAD. The total phenolic contents and antioxidant capacities of the samples were determined by Folin-Ciocalteu, FRAP (ferric reducing antioxidant power), ABTS and CHROMAC (Cr(VI) reduction antioxidant capacity) methods. It was identified that chestnut bee pollen samples with rich phenolic compound content prevented DNA oxidation by 11% in the Fenton environment. In addition, oxidative stress-induced DNA base damage products were examined by GC-MS / MS. It was determined that chestnut bee pollen prevented the formation of DNA base damage products by 68.12%.
