Özet
ÖZET
Bu çalışma, yerel mutfak kültürlerinde inovasyon girişimleriyle gastronomik kimlik ilişkisini, Erzurum, Bayburt ve Trabzon’daki işletmelerin
yaklaşım, deneyim ve stratejileri üzerinden karşılaştırmalı değerlendirmeyi amaçlamaktadır. Gastronomik inovasyon; modern hayatın hızlanan
ritmi içerisinde yerel ticari mutfağın sergilediği uyum arayışıyla birlikte kendini ifade etme, varlığını sürdürme çabaları olarak yemek hazırlama,
sunum ve servis süreçlerindeki yenilikler temelinde incelenmiştir. Değişen tüketim pratikleri, yoğunlaşan turizm hareketliliği ve artan rekabet
koşulları restoranları bir yandan yerelin özgünlüğünü korumaya, diğer yandan yeniliklere yöneltmektedir. Bu süreç, işletmelerde coğrafi aidiyet
ile ekonomik beklentiler arasında yeni bir denge arayışına neden olmaktadır. Erzurum, Trabzon ve Bayburt’ta faaliyet gösteren restoran
işletmecileriyle yarı yapılandırılmış görüşmeler gerçekleştirilmiştir. Elde edilen veriler içerik ve tematik analiz yöntemleriyle çözümlenmiş,
bulgular SWOT analiziyle sunulmuştur. Bulgular, işletmelerin yeniliğe açık olmakla birlikte yerel malzeme, üretim biçimi ve kültürel aidiyetin
korunmasını temel öncelik olarak gördüklerini ortaya koymaktadır. Katılımcılar, kontrolsüz müdahalelerin özgünlüğü zayıflatabileceğini
belirtirken; planlı ve ölçülü uygulamaların bölgesel tanıtım, rekabet gücü ve gastronomi turizmi açısından önemli fırsatlar sunduğunu
vurgulamaktadır. Erzurum kontrollü inovasyon ile öne çıkarken, Trabzon stratejik ve bütüncül, Bayburt ise fırsat temelli inovasyon yaklaşımıyla
farklılaşmaktadır. Sonuç olarak inovasyonun yalnızca bir değişim pratiği değil, yerel mutfakların varlığını sürdürme, kendini ifade etme ve
mekânsal temsiliyetini güçlendirme aracı olarak dengeli politikalarla desteklenmesi gerektiği kanaati oluşmuştur.

ABSTRACT
This study aims to provide a comparative evaluation of the relationship between innovation initiatives and gastronomic identity in local culinary
cultures, based on the approaches, experiences, and strategies of enterprises in Erzurum, Bayburt, and Trabzon. Within the accelerating rhythm of
modern life, gastronomic innovation is examined through novelties in food preparation, presentation, and service processes, viewed as efforts by
commercial local kitchens to adapt, express themselves, and sustain their existence. Shifting consumption patterns, intensifying tourism mobility,
and increasing competitive conditions drive restaurants to preserve local authenticity on the one hand, while steering them toward innovation on
the other. This process necessitates a search for a new equilibrium between geographical belonging and economic expectations within these
enterprises. Semi-structured interviews were conducted with restaurant operators active in Erzurum, Trabzon, and Bayburt. The data obtained
were analyzed through content and thematic analysis methods, and the findings were presented using SWOT analysis. The results indicate that
although enterprises are open to innovation, they regard the preservation of local ingredients, production methods, and cultural belonging as their
primary priority. While participants note that uncontrolled interventions may undermine authenticity, they emphasize that planned and measured
practices offer significant opportunities for regional promotion, competitiveness, and gastronomy tourism. Erzurum stands out with a controlled
innovation approach, whereas Trabzon differentiates itself through a strategic and holistic approach, and Bayburt through an opportunity-driven
innovation approach. In conclusion, the study suggests that innovation should be supported through balanced policies, serving not only as a
practice of change but as an instrument for local cuisines to sustain their existence, facilitate self-expression, and enhance their spatial
representation.
