Abstract:

The traditional Turkish food, pumpkin dessert, is made only during the winter season. İn this study, the possibilities of consuming canned pumpkin dessert in the other seasons; increasing the working capasity of the food sector along the winter; optimisation of the producing process and also suitable species of the pumpkin for this product were searched and examined. Result of this research can be helpful for seed campanies and food industry. Four different making process and five different pumpkin species (Eskişehir, İnegöl, Sakarya, Yenişehir and Ancan 97) were used in this study. All kinds of pumpkins were processed to dessert according to the same recipe which was determined by material balance calculations. Desserts were pastoirized at 100 °C for 10 minutes and than cooled. Physical, chemical and sensual analyses were carried out. As the result; it was concluded that ideal species was Sakarya pumpkin and the best method was addition of sugar directly (the first method).
